Faced with the need to maintain a continuous and strict control in the production of chicken eggs in order to guarantee physicochemical and microbiological quality, it is necessary to investigate methods of controlling microorganisms, naturally present on the surface of the eggshell, which affect the quality of commercial eggs.

This test carried out on 07/02/2020 aims to analyze the efficiency of ozone gas in cleaning pre-cooked cassava and determine the concentration and time needed to clean it. 1kg of pre-cooked, frozen and vacuum-packed cassava was used, of which 500g was deposited in the PVC drum.
