When searching onACADEMIC GOOGLEin Portuguese and using the expression "Ozone in Food" more than 27,000 results appear.

Much is already known about the use of ozone in food processing industry. Part of this knowledge was developed by companies that pioneered the use of this technology and that encouraged Research and Development at Universities in several countries. In Brazil, this research has been led, for more than 20 years, by the UFV - Federal University of Viçosa, in Minas Gerais, in the Agricultural Engineering department. Teachers and students devoted time and attention to discovering the best way to apply ozone, according to the type of food and the type of processing.

Currently, we have a broad organized knowledge base  that facilitate the implementation of ozone projects in the food industries in Brazil.
